Prep time: 10 minutes | Serves 6
INGREDIENTS
- 6 cups cubed red seedless watermelon frozen* (or strawberries)
- 2 limes peeled
- 1 orange, peeled, seeded
- ¼ cup water
- 4 tablespoons sugar
- 2 tablespoons tequila
- 2 tablespoons of Cointreau or another orange-flavored liqueur
INSTRUCTIONS
- To freeze watermelon, lay it out in a single layer on a rimmed baking pan lined with foil and freeze for several hours until solid. (I typically do this the night before or early in the day.)
- Combine all ingredients in the blender and blend until smooth.
- You can eat it right away, which makes it similar to a sorbet, or you can pour the mixture into a metal 8-inch pan and freeze it until solid.
- Scrape with the tines of a fork and scoop into serving dishes. Garnish as desired.
