Grilled Peaches with Goat Cheese Honey Basil Ice Cream

Grilled peaches are a delightful summer treat that pairs wonderfully with various toppings. One of my favorite pairings is a soft, tangy goat cheese mixed with store-bought vanilla ice cream, chopped fresh basil, lemon zest, and juice with honey drizzled throughout. The combination is satisfyingly fresh and creamy, with a hint of herbaceousness from the basil. Substitute with mint if you’re not a basil fan or prefer a crisp flavor.

Goat Cheese

Goat cheese adds a tangy, creamy element to the dish. You can use crumbled goat cheese or, even better, a whipped goat cheese spread.

Honey

Drizzle high-quality honey over the warm grilled peaches. The sweetness balances the tanginess of the cheese.

Basil

Fresh basil leaves provide a burst of flavor and a hint of herbaceous. Tear or *chiffonade the basil leaves for a beautiful presentation. *Chiffonade is a French cooking technique that finely cuts herbs or leafy veggies into long, thin strips.

Peaches — Ripe is Better

Remember to choose ripe peaches for grilling; they should be golden and fragrant. You may substitute with nectarines or plums. Grilled peaches can be enjoyed as a dessert or even for breakfast.

Grilled Peaches with Honey-Basil-Goat Cheese Ice Cream

PREP TIME: 8 minutes mins | COOK TIME: 12 minutes mins
FREEZING TIME FOR ICE CREAM: 3hours hrs.
TOTAL TIME: 3 hours hrs. 20 minutes | SERVINGS: 4 people (2 halves each)
EQUIPMENT: One gas or charcoal grill

INGREDIENTS:

    • 4 ripe peaches cut in half pits removed.
    • 2 tablespoons fruity olive oil
    • A pinch of sea salt

For the Ice Cream

    • 4 cups of your favorite store-bought vanilla ice cream slightly softened.
    • 1 – 4-ounce soft goat cheese
    • 1 lemon zested and juiced
    • 4 tablespoons honey
    • 4 tablespoons fresh basil chopped (mint can be a substitute)
    • 1 cup cottage cheese, optional

INSTRUCTIONS:

For the Peaches

    • Heat the grill on high. Cut the peaches in half and remove the pits.
    • Drizzle with one tablespoon of fruity olive oil, a pinch of salt, and one tablespoon of honey.
    • Toss to coat evenly.

For the Ice Cream

    • Combine ice cream, goat cheese, lemon zest, juice, and two tablespoons of honey in a large bowl.
    • Add more honey for a sweeter flavor. Place the mixture in an airtight container and refreeze until ready to use. 1-4 hours

Finish

    • Grill peaches on high until they have good grill marks.

Serving

    • Spoon the peaches onto the plate. *I add a tablespoon of cottage cheese to the serving plate to prevent the peaches from sliding around; this is optional.
    • Serve with a scoop of your specially-made ice cream and more honey.
