INGREDIENTS:

  • 3 sticks of unsalted butter
  • 1 ½ cups powdered sugar
  • 1-gallon peppermint ice cream
  • ½ cup chopped peppermint stick candy (plus extra to-rim glasses)
  • Peppermint schnapps (1 jigger per glass)
  • Honey (to rim glasses)

INSTRUCTIONS:

For the Ice Cream Batter:

  1. Allow the peppermint ice cream to sit at room temperature to soften while preparing other ingredients.
  2. Using very soft butter, blend the butter, powdered sugar, and chopped peppermint candy until well combined.
  3. Add the softened ice cream and mix well. The mixture may be slightly runny and chunky, but this is fine—the butter chunks will melt beautifully in the hot water later.
  4. Freeze the mixture in a plastic container overnight or until firm.

To Prepare the Peppermint Cream Hot Toddy:

  1. Rim your glasses with chopped candy cane by applying honey to the rim and pressing the candy onto it.
  2. Fill an 8-ounce glass with boiling water, leaving 2–3 inches of headspace.
  3. Add one generous jigger of peppermint schnapps. 
  4. Add one ice cream scoop full of the frozen batter to the glass. Do not stir the cream, as it will flow over the sides.
  5. Garnish with a candy cane for a finishing touch.
