When Jason Quiroga decided to open Aviators, he meticulously crafted every aspect, from the food to the cocktails and the restaurant’s ambiance. In designing the cocktail menu, he aimed for a universal appeal, recognizing the contributions of both male and female aviators. Alongside a robust Old Fashioned, he introduced the female-forward Amelia.

This beautiful drink features Ketel One Grapefruit Rose vodka, house-made hibiscus-infused nectar, and a splash of prosecco. Named in honor of the pioneering female aviator Amelia Earhart, the drink is shaken and served straight up in a martini glass with a rim of strawberry Pop Rocks and a flower garnish. It has quickly become the most popular cocktail at this newly opened establishment. Pair it with a selection of delectable wings, and you’ll soar to new heights!
